No you cannot polish them . You can lay one more layer above the existing tiles.Also thickness matters gangsaw granite will be 20mm thick and vetrified tile will be 10mm thick.Don't go for semi vetrified tiles . They are more like ceramic tiles that you put for bathrooms .

2. You need to measure laying area and buy in 1 lot as you may not get the same colour in next lot
3. 150per Sq gang size-measurement 8*10 - Chances of crack in granite is minimal .
However better to inspect every slab
